Today I am sharing a special lemon bar recipe that was passed down from my amazingly talented mother-in-law! I really hope she doesn’t kill me for sharing this with the world, but I couldn’t resist! I think this will probably be one of the only recipes I share of hers, unless I can convince her to create some for S&C! Hmmm, something to think about… what a treat that would be because she is THAT good of a baker! Anyway, I didn’t even like lemon bars until she made these… then I flipped and now I LOVE them! The crust alone is so tasty, especially the dough (which doesn’t contain eggs so eat up, haha). Hope you enjoy them, thanks Char for the recipe!
2 cups flour
1/2 cup confectioners sugar
1 cup butter
Combine all the ingredients until the dough clings together. Press the dough into a 9×13 un-greased pan. Bake for 17 minutes at 350 degrees.
1/3 cup fresh squeezed lemon juice (about 2 or 3 lemons will do the trick)
2 cups sugar
1/4 cup flour
1/2 teaspoon baking powder
Mix the eggs together first. Then continue to mix in the rest of the ingredients. Try not to over-mix the filling… a tip would be to add the dry ingredients together in a bowl first. Take the crust out of the oven and pour the lemon filling on top. Bake for 25 minutes at 350 degrees. Let it cool completely before you cut into squares or shapes. Once the shapes are cut, sift powdered sugar on top! SO GOOD!
