inspiration for an easter brunch

Easter is only a few weeks away and if you’re hosting a fabulous brunch you must start planning your menu soon! Easter is actually one of my favorite holidays so I’ve been Easter-pinning-crazy these past few weeks for inspiration. How does this sound? A simple, yet beautiful table setting with Farmers Market flowers and floral place cards. To start the morning off right, as your fellow “brunchers” arrive, serve them a gorgeous rhubarb mojito (recipe here). Pass around mini eggs benedict (Katie has a wonderful recipe) before everyone takes their place at the table. It can be a little tasting before they devour the carefully planned menu you just worked hours preparing for your loved ones. Finish with a pink lemonade cake and send your guests home with one of your creative Easter eggs (inspired by these) as a little token of appreciation. Sounds like a beautiful morning!     This is definitely how I envision Easter brunch, pretty and refreshing! The pink lemonade cake is highly recommended, I made it during the summer and it was a great hit!
