Hello rum granita!! I love that granita is so simple to make. It’s a recipe you can whip up the night before, freeze it and it’s ready to serve (when you are!) the next day. It’s a frozen treat, kind of like a slushy but made from pureed fruit. So in honor of Memorial Day I made a strawberry watermelon and coconut rum granita! I know – longest granita title ever, but I couldn’t leave out any flavors! The coconut granita is incredibly creamy and tastes like a piña colada. The strawberry watermelon is refreshing. I like the two flavors mixed together because it’s a nice contrast and you feel like you’re on vacation when you take a few bites! Serve this dessert in mini flare glasses, with a tiny spoon and garnish with a watermelon slice. Enjoy!

 

Coconut Rum Granita
1/3 cup sugar
1/2 cup water
13 ounces (one can) coconut milk

 

Directions:
Bring the sugar and water to a boil in a small sauce pan until sugar is melted.
Let it cool and then stir in the coconut milk.
Pour the mixture into a pan and freeze for 4 hours or overnight.
Shred the mixture with a fork to make it like a slushy.

 

Strawberry-Watermelon Granita  
2 cups fresh strawberries
2 cups cubed watermelon
1/3 cup sugar
6 ounces rum

Directions:
Puree the watermelon and strawberry in a blender.
Add in the sugar and rum and blend together.
Pour into a pan and freeze.

 

Oh and watch out for little baby hands digging into your granita! I caught one in my house!

    that looks so refreshing!!! and i love that it sounds like it’d still be great if I leave the alcohol out, right? any suggestions on a substitution? 🙂
