Sweet Mornings – Baked Oatmeal with Peaches and Bananas

BakedOatmeal A few weeks ago, I was chatting with my cousin over breakfast and she asked if I had ever tried baked oatmeal? I never heard of baked oatmeal, but I asked her to tell me more because it sounded like an amazing morning breakfast! She explained the process and I went home to make my own. It’s so easy to make and it’s perfect for entertaining, especially if you have overnight guests that you want to surprise in the morning. It makes the house smell like brown sugar and gives a warm, cozy feeling. The bananas on the bottom of the pan add a divine sweetness and you can top it with any kind of fruit you want. Serve it in a bowl with warm milk and some blueberries to garnish.

Baked Oatmeal
3 cups oats
3/4 cup brown sugar
1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoon cinnamon
1 egg
1/2 cup butter (1 stick), melted
1 1/2 cup milk
2 bananas
1 peach
1 tablespoon vanilla

Directions
Preheat the oven to 350 degrees
Combine the oats, brown sugar, baking powder, cinnamon and salt in a bowl.
In a separate bowl whisk together the milk, eggs, vanilla and melted butter.
Stir the liquid mixture into the oats and mix until combined.
Slice the bananas and cover the bottom of the pan with the bananas. Then pour the oats over the top of the bananas and then add sliced peaches or berries to the top. Bake for 35 minutes. Serve warm with warm milk. Enjoy!!

    This sounds SO good! I may try it this weekend, but sub the bananas for blueberries!

  2. Mmm…I just had some baked oatmeal this past weekend at a Farmer’s Market. It was so delicious. I’ve yet to make it at home though…gotta try this one 😉
