These coconut water popsicles are so pretty and refreshing! Made with coconut water, they are healthy popsicle that is perfect for adults and kids. Packed with fruit and slightly sweet, these truly are guilt-free popsicles! To help make these, check out our complete guide to making popsilces.

Hot summer days are upon us and we’ve been soaking them up with homemade summer popsicles! If you follow Sugar and Charm on Instagram you might have noticed us snacking on some coconut water popsicles a few weeks ago.

They’re absolutely delicious and great for kids since they’re literally just coconut water (striped ones use coconut milk) and sliced fresh fruit.

My son is a fan of these refreshing, lightly sweetened popsicles and since he usually gets a treat during the day, like a cookie or whatever, I don’t feel guilty giving him a coconut water popsicle too.

We also love our lemonade popsciles and our easy watermelon popsicles made with homemade watermelon juice!

How To Make Coconut Water Fruit Popsicles

  • To make the striped popsicles, puree your favorite fruit with coconut milk.
  • Then pour a small amount of the puree into a popsicle mold.
  • Freeze for about 30 minutes, then add in a layer of coconut water, freeze again for 30 mins, and add in some puree.
  • Keep this pattern going until you reach the top of the mold.

Easy Popsicles

I created the striped version by pureeing mango and coconut milk to create the yellow stripes and then strawberries and coconut milk to create the pink stripes.

Use kiwis, strawberries, pineapple and dragon fruit for the popsicles. Just buy a bottle of coconut water, add it into a popsicle mold with sliced fruit and freeze.

Now, if you like them a little sweeter, feel free to add some sugar to the coconut water or even some pineapple or orange juice would be great too.

Health Benefits Of Dragon Fruit

Dragon fruit is low in calories but packed with essential vitamins and minerals. It also contains a substantial amount of dietary fiber. It’s also a great source of magnesium, a nutrient needed for over 600 biochemical reactions in your body.

This fruit contains the antioxidants vitamin C, beta-carotene and lycopene. It’s also pretty and looks gorgeous in popsicles.

Health Benefits Of Coconut Water

Over the past few years coconut water is been the trendy thing to drink, but it’s not just a tipple for between hot yoga sessions, it’s a great ingredient for recipes…such as these super refreshing fruit popsicles!

Coconut water should not be confused with coconut milk, which is made by adding water to grated coconut meat. Coconut water is the juice found in the center of a young, green coconut. It helps nourish the fruit and is packed with goodness! There are many health benefits of coconut water:

  • Coconut water contains antioxidants that protect your cells from damage caused by free radicals.
  • Studies that coconut water may improve blood sugar control. It’s also a good source of magnesium, which may increase insulin sensitivity and reduce blood sugar levels.
  • New research suggests that water from coconuts may prevent kidney stones by reducing crystal and stone formation.
  • Coconut water is effective at replenishing fluids and electrolytes after exercise. It is comparable to other sports beverages.

Tip For Making Fruit Popsicles

  • When you pour the mixture into the ice pop molds, leave about ¼ inch a the top to let the mixture expand as it freezes.
  • Some molds have a metal tray through which you can insert the sticks. If so, make sure the sticks go in straight, otherwise you’ll have a really hard time taking the metal tray off when you are ready to unmold the ice pops.
  • Turn your freezer to the coldest setting. The faster the ice pop freezes, the smaller the ice crystals will be, which means it will be creamier. Put your molds at the back of the freezer where it’s coldest.
  • Enjoy your ice pops immediately or store them in sealable freezer bags or waxed paper bags in the freezer. Make sure they are airtight to prevent ice crystals from forming inside and a taste of “freezer burn.” 
  • Use insulated freezer bags or a Styrofoam container or ice chest, if you ever need to transport ice pops. The more ice pops you transport together, the longer they will stay frozen. For a very long trip you may want to purchase a block of dried ice, which will keep them frozen for many hours.
