I do realize this is Sugar and Charm, but it’s not always about sugar around the Passante house! We do eat healthy food for lunch and dinner… sometimes. I obviously don’t share too many of these recipes, but this salad is my absolute FAVORITE. Hands down I could eat this for lunch and dinner and it’s packed with nutrients from kale, pomegranates, Brussels sprout, walnuts and protein! It has the most delicious sweet, smoky and salty flavor tossed in a light, garlic olive oil and lemon dressing. I also love that it works with every season! Perfect for a summer dinner party, but hearty enough for a winter meal. The red and green is great for the holidays too. Below is my recipe for the delicious kale and Brussels sprout super salad with prosciutto!

Kale + Brussels Sprout Salad with Prosciutto

2 bunches organic Italian kale, washed, spun in a salad spinner and then thinly sliced
12 Brussels sprouts super finely sliced
1/2 cup chopped walnuts
1/2 cup pomegranates
3/4 cup shaved Romano cheese
1/4 cup green onions
1 package of high quality prosciutto

Directions:

Add all ingredients and dressing into a large bowl and mix it all up! Easy and delicious!

Salad Dressing
1/2 cup olive oil
juice of 1 lemon
1 whole garlic grated/shaved
1 teaspoon white pepper
course sea salt (I used black Himalayan salt and did a few large pinches)
