Cast Iron Skillet Olive Oil and Apple Cakes

This olive oil cake, made with scrumptious apples, is baked in a cast iron skillet. This delicious dish is so moist and addictive! It’s a perfect Autumn treat.

With this pumpkin pie spice and apple-crisp recipe, you can celebrate autumn in style.

We’re dreaming of fall apple picking with these cast iron olive oil and apple cakes! We’ve made an incredible olive oil cake recipe before, and it turned out so good!!

So we’ve slightly altered the recipe, adding pressed apple cider and baked sliced apples inside the cake!

It was originally adapted from this delicious recipe from Food52, but baking it in a cast iron skillet adds so much rustic charm and tastes even better….  such a delicious recipe, perfect for this time of year.

The olive oil makes the cake so moist, and without heavy frosting, you feel like you can eat the entire cake! Also, for a fun, entertaining idea, we divided the batter into four mini cast iron skillets.

I use these ones and love them. If you prefer, you can make one large cast-iron cake too. Serve with a scoop of vanilla ice cream on top, and it’s good eatin’!

How To Make Cast Iron Skillet And Olive Oil Cakes – Step By Step

Ingredients

Flour

Sugar

Baking Powder

Baking Soda

Salt

Olive Oil

Whole Milk

Eggs

Apple Cider

Orange Juice

Orange Zest

Red Apples, Sliced

Directions

  • Preheat the oven to 350 degrees.
  • Combine the dry ingredients in a medium bowl and set aside.
  • In a mixing bowl with a paddle attachment, add all of the wet ingredients and beat until smooth.
  • On slow speed, add the flour mixture and orange zest.
  • Beat on high for a few seconds until smooth. Don’t over-mix.
  • Pour the batter into 4 mini, lightly-greased cast iron skillets.
  • Arrange sliced apples in each pan. About 1 apple per pan and bake for about 20 minutes or until done.

Why Use Iron Skillet?

It is better to use an iron skillet when cooking this dish because it helps to evenly distribute the heat. This ensures that the cake cooks evenly without any hot spots.

What Is An Olive Oil Cake?

An olive oil cake simply substitutes butter for olive oil. The olive oil gives the cake a lovely fruity flavor while keeping the cake moister and lighter than butter ever could. 

How Long Does Olive Oil Cake Last For?

As long as it is not gobbled up straight away (often the case), this cake can usually last up to 3 days at room temperature. Because the cake is made with liquid fat instead of solid, it will keep longer than butter-based cakes. Perfect for prepping ahead of time.

Cast Iron Skillet Cakes are delicious and simple to make. They use a cast iron skillet, with the cake mixture poured in, and then put it straight in the oven or on the hob.

The skillet creates a crispy cake on the edges and gooey in the middle. It’s utterly addictive and won’t be around for long!

Top Tips

  • Try and use the freshest and best olive oil you can. As a test, if the oil is not good enough to put on your salad, then don’t use it for your olive oil cake. 
  • Try a little powdered sugar for garnish. It’s a great finishing touch!
  • If you’d like your apple slices more uniform, don’t spoon them onto the batter in the pan. Instead, line up the slices and place them vertically into the batter. Repeat, spacing them at intervals until you’ve used all the apples.
  • Use mini skillets to create cute individual cakes, perfect for parties!
