Piña Colada bars are similar to the lemon bars
I made before. I’ve changed a few ingredients and added some delicious shaved coconut to the top. It’s a perfect summer combination of a Piña Colada wrapped up into a bar! Can you imagine serving these on the side with a Piña Colada drink? Yum! The crust is super buttery (my favorite) and the hint of pineapple and coconut have me wishing I was on a tropical island, laying in a hammock 😉 Read below for the recipe and why not throw a tropical Piña Colada party this summer?!
Piña Colada Bars
2 cups flour
1/2 cup confectioners sugar
1 cup butter
Combine all the ingredients until the dough clings together. Press the dough into a 9×13 un-greased pan. Bake for 17 minutes at 350 degrees.
1 cup fresh squeezed pineapple juice
1 1/2 cup sugar
1/4 cup flour
1/2 teaspoon baking powder
Mix the eggs together first. Then continue to mix in the rest of the ingredients. Try not to over-mix the filling… a tip would be to add the dry ingredients together in a bowl first. Take the crust out of the oven and pour the pineapple filling on top. Bake for 25 minutes at 350 degrees. Let it cool completely before you cut into squares or shapes. Once the shapes are cut, sift powdered sugar and coconut shavings on top! For a different twist, you can bake them with the coconut on top.
