Sweet Mornings – The Best Frittata Recipe Ever!


I was excited when Better Homes and Gardens invited me to try  the new line of dishware they sell at Walmart. Since I have a set of round white dishes, I chose some modern, but classic square dishes in white. They’re extremely durable, beautiful porcelain dishes and a 16-piece set is only $39! I wanted to try my new dishes out and since my in-laws are in town, I thought I’d make them the best and easy frittata recipe for brunch. I’ve been making this frittata for almost 8 years now and it’s the best one I’ve ever tasted! I usually serve it for special occasions and it’s become a Christmas morning tradition too. The frittata is very cheesy (that’s a good thing!), moist and simply  delicious. I served it with heirloom tomatoes and some delicious and spicy Bloody Marys. Everyone loved it and I can’t stress enough how easy it is to make! Recipe below…

Best Frittata Recipe Ever (Serves 10)
10 large organic eggs
1 (16 ounce) container of small curd cottage cheese
2 (8 ounce) packages shredded Monterey Jack cheese
1 (4.5 ounce) can chopped green chiles
1 (4 ounce) jar diced pimentos, drained
1/4 cup chopped green onions
1/4 cup (1/2 stick) melted butter
1/4 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon ground pepper corn or black pepper


Preheat oven to 350.
In a large bowl, whisk eggs until combined. Stir in cottage cheese, shredded cheese, chiles, pimentos and butter.
In a separate small bowl combine flour and remaining dry ingredients. Add to egg mixture and stir until combined. Pour mixture into a large cast iron skillet dish, and bake for 40 to 45 minutes.

I used this recipe for Bloody Marys, but doubled up on the hot sauce and added green hot sauce and two tablespoons green olive juice too.

    this was wonderful. My mother-in-law even really enjoyed it. It has a nice fluffiness to it, lightness, and just enough flavor/seasoning. The base of the recipe could probably be interchanged with other flavors such as bacon, mushrooms, spinach, etc.

    can you reduce the serving? like, use a little less egg? or put them in the fridge? because I think I can’t finish a frittata that size by myself :/
