Roasted Cauliflower and Potato Breakfast Bowl with Fried Egg


BreakfastBowl2BreakfastBowlBreakfast and brunch are my favorite meals to eat and cook! I like that they’re savory and sweet with eggs, pancakes, breakfast burritos, cinnamon rolls… you get it. For this recipe I skipped the sweetness and created a healthy, savory breakfast bowl with my fave roasted vegetable, cauliflower. It’s soooo tasty, packed with protein and vegetables. Really, there’s no better way to start the morning! It’s also an extremely easy recipe, so if you’re serving a lot of people you can just roast more veggies!

Roasted Cauliflower and Potato Breakfast Bowl with Fried Egg  (makes 2 bowls)
1 large organic cauliflower, chopped
1 potato, chopped into small cubes
3 cloves garlic
1/4 cup red cabbage
1 avocado
2 eggs
Lots of olive oil, salt and pepper

In a 425 degree oven, roast the cauliflower, potato and garlic in a pan with a generous amount of olive oil, salt and pepper for about 30 minutes. Make sure to turn so it doesn’t burn.

Once it’s done, divide into two bowls. Add in a little red cabbage, a bit more salt and pepper to taste and sliced avocado.

Heat 2 tablespoons of oil in a pan, then when it’s hot gently crack an egg into the oil to fry. Turn over once, add a little salt and pepper and then place on the cauliflower bowl.
