Gingersnap Caramel Sandwich Cookies
3/4 stick unsalted butter, room temp.
1/4 cup vegetable shortening, room temp.
1 cup light brown sugar
1 cup refined white sugar
1/4 cup molasses
2 cups flour
2 teaspoons baking soda
2 teaspoons cumin
1 tablespoon ground ginger
1/2 teaspoon salt
Preheat the oven to 350 degrees.
Sift the dry ingredients in a bowl and set aside.
In an electric mixer cream the butter, shortening and 1 cup sugar together.
Add in the molasses and eggs and continue to beat.
Slowly add in the dry ingredients.
On a baking sheet, measure out 2 teaspoons dough and form a ball.
Bake for about 5 minutes and remove them while they still look doughy. They harden while the cool.
Easy Caramel Sauce
1 cup brown sugar
1/2 cup heavy whipping cream
5 tablespoons salted butter
1 teaspoon vanilla
Combine all of the ingredients in a heavy sauce pan over medium heat. Bring to a small boil stirring constantly. Let the sauce boil for about 5 minutes, then simmer for another 10 until it thickens. Refrigerate until cold and thick. If it’s too thick once you take it out to use, microwave for a few seconds.
