This cucumber and kiwi gimlet recipe is refreshing and easy to make! Perfect for a spring brunch!

We’re serving up a delicious cucumber kiwi gimlet recipe to welcome spring! This recipe uses fresh ingredients and is lightly sweetened with a homemade kiwi simple syrup. It’s the perfect spring cocktail to relax with outside now that the weather is warming up!

What is a Gimlet?

The Gimlet is an old-fashioned cocktail that was given to sailors as a medicinal treatment for scurvy. Thankfully you don’t need to be a sailor with scurvy to enjoy the refreshing goodness that is the Gimlet!

Luckily we gave it a fresh twist by adding the cucumber and homemade kiwi simple syrup. One quick tip when making shaken cocktails… the longer and harder you shake, the better the cocktail.

The ice is able to dilute the ingredients and make the cocktail very cold, thus creating the perfect blend and making it less sweet and tart. It’s really so important, so shake away!!

Cucumber Garnish

To get the thinly sliced cucumber garnishes, use a mandoline slicer. It’s the best way to get thin enough strips on the cucumber to wrap around the inside of the glass. Then pour in the cocktail.

Kiwi Simple Syrup for a Gimlet

For the kiwi syrup, we used 1 cup of organic sugar and 1 cup of water with 4 sliced kiwis, peel removed.

Syrups are really easy to make and you can see our guide to making them here. Basically, you just bring the sugar and water to a soft boil until the sugar is dissolved. Add in the kiwi and simmer for about 15 minutes.

Then remove from heat and let it all sit for another 30 mins so the kiwi flavor infuses.

I pour it through a mesh sieve and then into a glass bottle to store. You can make a lot of recipes with homemade simple syrups! These bottles are my favorite for syrups!

Ingredients

  • 2 ounces gin
  • 1/2 cucumber, cut
  • 1 tbsp lime juice
  • 2 ounces kiwi simple syrup, recipe in post
  • 1 cup ice, to shake with

Instructions

  • In a cocktail shaker add in all of the ingredients.
  • Gently muddle cucumber.
  • Fill with ice and shake really well for at least 35 seconds. The more you shake and let the ice dissolved the better.
  • Strain into a coup or tall thin glass
