We’re cooling down this summer with these delicious Roasted Blueberry Crème fraîche Popsicles! Crème fraîche is a cream made from heavy cream and buttermilk. It’s perfect on desserts, waffles or as a creamy dip with fruit, so we knew it would be awesome in popsicles! We roasted the blueberries with honey to add a little more sweetness and juice to them, then added them to the popsicle mold and poured the cream mixture over the top. The popsicles are so good. They have a gourmet taste to them and are the perfect balance of creaminess and sweetness. Try them out and you won’t be disappointed!

Roasted Blueberry Crème fraîche

Ingredients
  • 2 cupsblueberries
  • 2 tablespoonshoney
  • 5 ouncesCrème fraîche
  • 1 cupwhole milk
  • 1/2 cupcream
  • 1/4 cuphoney
  • 1/4 teaspoonvanilla
Instructions
  1. Preheat the oven to 375 degrees
  2. Line a baking sheet with tinfoil or parchment paper and scattered the blueberries on it
  3. Drizzle with honey and bake until juicy and they pop open, about 10-15 minutes
  4. Remove and let cool, set aside
  5. In a blender add the Crème fraîche, milk, cream, vanilla and ¼ cup honey and blend until fully incorporated.
  6. Add a spoonful of blueberries to each popsicle mold
  7. Pour the cream mixture into the molds and give it a little stir
  8. Place in the freezer overnight
  9. To remove the popsicles, run the bottom under lukewarm water for 30 seconds
