Chocolate Zucchini Cake Recipe

Ingredients
  • 2½ cupsshredded/grated zucchini
  • 1/2 cupbutter, room temp
  • 3/4 cupvegetable oil
  • 2 largeeggs
  • 2 cupssugar
  • ¾ cupunsweetened cocoa powder (like Hershey's)
  • 1½ teaspoonsvanilla extract
  • 1 teaspoonbaking soda
  • 1/2 teaspoonbaking powder
  • 1/2 teaspoonsalt
  • 1/2 cupsour cream
  • 1 shotespresso (or 1 tablespoon espresso powder)
  • 2 cupsall-purpose flour
  • 1/2 cupmilk chocolate chips
Instructions
  1. Beat the butter, sugar and oil on high until fully mixed
  2. Add in eggs one at a time and mix until combined
  3. Add in sour cream and mix
  4. Add in baking powder, baking soda, vanilla extract, espresso and salt
  5. Sift together flour, cocoa powder and beat on low until incorporated
  6. Stir in shredded zucchini and chocolate chips
  7. Pour into a sheet pan and bake at 350 degrees for 30 minutes
  8. Let it cool before frosting
