How to Make Ebelskivers.
I have a new minor obsession, ebelskivers! I’ve had the pan sitting in my cupboard for a year now. A few weeks ago, I finally decided to break it out and have my try at these little pancake balls.
I even used the box mix from Williams-Sonoma because I was so nervous these little guys wouldn’t turn out. Lo and behold… I filled them with some chocolate fudge and they were the perfect little pancake balls I was hoping for! The Sonoma mix is very good and pretty simple to make.
Since then, I have made them numerous times filling them with deliciousness like strawberry jam, pumpkin butter, lemon curd, and chocolate fudge. Zan and I go crazy over these now! What a perfect summer breakfast or a quick late-night snack 🙂
1 tablespoon batter over melted butter
A little bit of chocolate and then another tablespoon of batter on the top!
Turning the ebelskivers is the fun part! I used skewers and they worked great

Yup…I made these last year for my moms birthday or mothers day or something…i cant remember, i posted a blog abt it i think. anywho, it took me forever to actually use the ebelskiver pan that was sitting in my pantry for awhile…but when i did…Oh wow. They are impressive to look at and delicious! Btw…you are becoming one of my fav sites!!! So glad I found you!

I’m so excited that you wrote about these!! My family is Danish, and this is a traditional breakfast for us. Plus, they are nothing short of heaven on a plate 🙂

How fun! I must try them with fillings for breakfast. I’m Danish and in Denmark aebleskiver (translation: apple slices) are mostly eaten leading up to Christmas, especially on the Advent Sundays. We don’t usually fill them, but eat them with jams and icing sugar / powdered sugar on the side. Yum!

I would recommend finding a cast iron pan, they heat much better and you don’t need more than a quick spray of cooking spray. Also, the mix is good, but I am partial to our from scratch recipe. I am also Danish and have been eating them my whole life. I don’t fill mine but serve them with apple jelly or apple sauce and brown sugar.

Hi there. Just a small comment from The Netherlands. I just discovered your blog and I love it.
What you call ebelskivers is what we call ‘poffertjes’. You will see them at every fair, at pancake houses (restaurants) or any big event for children.
So much fun to see something like this, of which I thought was typically Dutch, on a US blog!

But as a Dane i gotta correct one small thing: It’s æbleskiver/aebleskiver, not ebelskiver. ^^

If you want a very elegant version of “Æbleskiver” then add grated lemon and orange peel and a (large) amount of Cointreau and/or Liqueur d´ Armagnac a l´Orange to the dough 🙂 Best regards from Lars (danish born)

Have you tried using regular boxed pancake mix from the grocery store? WOnder how it would work compared to William Sonoma ebelskiver mix? They look wonderful.

I’ve had “poffertjes” as I know them with Nutella as a topping and they are great.
Must try them with Nutella as the filling.Yummmmm
