We’re holding onto and celebrating the last few weeks of summer! I figured one more summer-themed dessert was in order before the pumpkin starts flying! We decided to make Martha’s strawberry cupcakes topped with strawberry butter meringue frosting. You can find the recipes here and here. The cupcakes were delicious and the frosting was perfection. Butter meringue is definitely my favorite frosting to use for cakes and cupcakes. I made two small adjustments by adding one stick less butter (so only 2) to the frosting and a little less strawberry jam. It turned out great! After we baked our cupcakes, we threw an end-of-summer and pretend birthday party for Romeo’s stuffed animal. We also welcomed another Martha Stewart Collection cake stand to our ever-growing collection. This is one of the prettiest stands I own. I love how light it feels and that it comes with a beautiful dome. I’m a sucker for domes… they are the best, easiest and prettiest way to cover desserts! You can find it exclusively at Macy’s! Ohh these look delicious! I love that you are still in the summer spirit, I am right there with you! I will have to try out this recipe I am a sucker for good frosting (my guilty pleasure) but I dont think I have ever made butter meringue frosting..but it sounds delicious.

beautiful cupcakes, very professional looking! i love domes and cloches too. im making the cupcakes and mini wedding cake for my goddaughters wedding in october and her mom (my bestie since gradeschool!) and i are using our collection of cloches for decorating and cupcake display….they just pretty everything up! the pretend birthday party sounds pretty darn adorable! ha!
