Lavender Chocolate Chunk Shortbread Cookie Recipe
  • 1 cup plus 1 tablespoons cold, salted butter
  • ½ cupgranulated sugar
  • ¼ cuppacked light brown sugar
  • teaspoons vanilla extract
  • 2 cupsall-purpose flour
  • ¼ tablespoonlavender
  • 6 ouncessemi-sweet or bittersweet dark chocolate, chopped
  • 1 large eggbeaten to blend
  • PinchFlaky sea salt
  1. Beat butter until light and fluffy
  2. Add in the vanilla extract and continue to beat
  3. Pour the first half of the jar into the butter mixture, leaving the flour in the jar
  4. Beat on medium until everything is incorporated, scrape down the sides
  5. Add in the flour and beat on low until mixed
  6. Separate dough in half and use your hands to shape two 2” round logs of dough on parchment paper
  7. Refrigerate for 2 hours
  8. Preheat the oven to 350 degrees
  9. Brush the dough logs with beaten egg
  10. Cut each log into ½” thick rounds and place on cookie sheet lined with parchment paper
  11. Bake for 12-15 minutes
  12. Sprinkle with sea salt and enjoy!
