I love granola! The fun thing about making your own granola is that you can mix ingredients and nutrients you want to eat. I had the urge to make chocolate, coconut granola.
But not like chocolate morsels… I wanted to use organic cacao powder and nibs because they’re rich in antioxidants (richer than wine and blueberries!) and also one of the highest sources of magnesium. I always knew chocolate was good for you : )
I added coconut flakes and toasted coconut to give it a yummy flavor, as well as almonds because they’re the most nutritious out of all the nuts. I added quinoa flakes because they provide essential amino acids (read this) and blend in well with the oats.
To sweeten it, I stirred in a little honey and a small amount of coconut oil. I also used vegetable oil, but you can use all coconut or other oil if you prefer. I’ve been eating this for breakfast with coconut milk and berries and it’s great! I bottled some up to give to friends!
Directions:
Place all of the dry ingredients in a bowl (except the toasted coconut!) and mix. Then combine the wet ingredients and stir until mixed. Pour over the dry ingredients and stir until everything is coated. Spread the oat mixture onto a baking sheet with sides. Bake at 350 degrees for 55 minutes, checking on it and stirring occasionally. The oats should be a nice golden brown. Remove from the oven and let them cool. Then toss in the toasted coconut. Enjoy!

Hey. just to let you know that there is some info missing in your ingredients. I don’t see any cacao nibs listed and there are some measurements missing.

This looks delicious! Can you explain “1 cut toasted coconut”? Did you mean 1 cup and if so how is this different from the cup of coconut flakes. Sorry, cooking with coconut is fairly new for me. Thank you!
