Ingredients

Olive Oil Cast Iron Cake

  • 2 cups flour
  • 1 1/2 cups sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/3 cups olive oil
  • 1 cup whole milk
  • 3 eggs
  • 1/2 cup fresh-squeezed orange juice
  • 1/4 cup grand mariner
  • 1 tablespoon orange zest

Orange Glaze

  • 2 1/2 cups powdered sugar
  • 1/4 cup orange juice
  • 1/2 teaspoon Grand Mariner
  • 2 tablespoons orange zest

Instructions

Olive Oil Cast Iron Cake

  • Preheat the oven to 350 degrees. Combine the dry ingredients into a medium bowl and set aside. In a mixing bowl with a paddle attachment add all of the wet ingredients and beat until smooth. On slow speed, add in the flour mixture and orange zest. Beat on high for a few seconds until smooth. Don't over mix.
  • Pour the batter into a lightly greased cast iron skillet and bake for about 35 minutes or until done.

Orange Glaze

  • Add all of the ingredients into a mixing bowl and beat on high until smooth. Add more orange juice or powdered sugar to the perfect glaze consistency. Let the cake cool a bit, then pour the glaze over it.
