Using a food processor, crush the cookies until all large chunks are gone. Mix in the softened cream cheese.
Line a baking sheet with parchment paper and shape the batter into small balls to put on the tray. Put these in the freezer for 15 minutes.
In the meantime, melt the chocolate until smooth. Use a fork to hold the chilled dough and dip into the melted chocolate until it’s completely covered.
Place back on the parchment paper and cover with rainbow sprinkles.
They will harden on their own, but to speed up the process, you can put them back in the freezer for a few minutes.
Oreo Lollipops
Start by carefully twisting the tops off of 11 Oreo cookies and lay them out on a piece of parchment paper.
Follow the directions on the bag of the candy melts to fully melt the chocolate.
Dip a small part of the lollipop stick into the melted chocolate and sandwich between the two halves of the Oreo cookies. Repeat this step for all cookies and allow the chocolate to harden for about 5 minutes.
Put another piece of parchment paper out and put your rainbow sprinkles in a bowl.
Using the lollipop sticks, dip the Oreos into the melted chocolate, covering the entire area and removing excess chocolate.
Dip into the sprinkles covering all sides and allow to harden on the parchment paper. Makes 11 Oreo Lollipops.
