Avocado Popsicle Recipe

Equipment

  • Popsicle mold

Ingredients

  • 1 1/2 ripe avocado buy two avocados and use 1 and 1/2 of the other.
  • 2 tsp cornstartch
  • 1 cup coconut milk not in the can, just plain coocnut milk.
  • 1 cup sweetened condensed coconut milk in a can
  • 1 cup grapefruit juice freshly squeezed
  • 1/4 tsp salt

Instructions

  • In a small saucepan heat the coconut milk and cornstarch together until the cornstarch has melted. Just until the mixture is warm. 
  • Then, blend all of the ingredients together, including the warm coconut cornstarch mix, in a blender on high until rich and creamy. 
  • Pour into a popscile mold and freeze over night. 
  • To remove the popsicles, run warm water under the bottom of the mold for about 2 minutes. Then gently pull up on the stick to remove.
