In a saucepan combine the water, sugar, cinnamon stick, and star anise and bring to a simmer until the sugar has melted.
Let it simmer for another 5 minutes and then cool to room temperature.
The simple syrup can stay in the refrigerator for a week.
Cinnamon Pomegranate Margarita
Rim the glass with sugar.
Add all of the ingredients into a cocktail shaker filled with ice.
Shake the cocktail for 30 seconds. Give it a good shake and no less than 30 seconds as the ice needs to dilute and mix the ingredients.
Strain the cocktail in a sugar-rimmed glass filled with ice.
Garnish with a cinnamon stick, pomegranates, and an orange slice.
Notes
Make sure you shake the cocktail really well with ice. This is a very important step. Use sugar or salt for the rim.Before straining the cocktail, give it a taste with a small spoon. If it needs to be sweeter add in a dash more simple syrup. If it needs more lime add that and give it another shake.Enjoy!
