Chocolate Truffles
These chocolate truffles are decadent and easy to make. Top them with fun flavors like freeze-dried bananas and spicy chili to give the truffles a fun and even more deliciously flavor.

- 8 oz bittersweet chocolate finely chopped
- 8 oz semisweet chocolate finely chopped
- 1 cup heavy cream
- 2 tbsp coffee brewed
- 1 tsp vanilla extract
- 1/8 tsp salt
Toppings
- Dried Chilis
- Freeze-Dred Bananas or Strawberries
- White Chocolate
Finely chop the chocolate and place in a heat proof bowl with the vanilla, coffee and salt.
In a saucepan, bring the heavy cream to a boil then pour it through a mesh strainer into the chocolate.
Let the milk sit on the chocolate for a minutes to soften it. Then stir until all of the chocolate has melted and the mixture is smooth.
Let it sit for 4 hours room temperature or place it in the refrigerator until it’s harden.
Add 1 cup cocoa powder into a small bowl.
Using a small cookie scooper, scoop and roll to make a small ball.
Then, roll the chocolate into the cocoa powder to completely cover it.
Place it on a platter or cake stand and complete the rest.
To add toppings, use a Microplane and grate different igredients over the top.

- Chop chocolate finely for even melting
- Strain hot cream to ensure smooth ganache
- Let ganache set completely before rolling
- Cool your hands if they get warm while shaping
- Grate toppings from a height for even distribution
- Add liqueurs right after melting (1-2 tbsp)
- Bring refrigerated truffles to room temp before serving
