Ingredients

  • 1 cup cane sugar
  • 1/4 cup water
  • 1/8 cup honey
  • 2 tsp extract Clear if you don't want it to change the color. Use any flavor you like!

Instructions

  • Prepare lollipop molds with sticks and tiny edible flowers.
  • Mix sugar, water, and honey in a saucepan over medium heat. Stir until sugar dissolves.
  • Boil the mixture without stirring until it reaches 300°F (hard crack stage).
  • Remove from heat and quickly stir in the extract flavor and food coloring.
  • Spoon into molds or over sticks on the baking sheet.
  • Cool completely before wrapping and enjoying!

I use these molds and sticks.
Observe as the sugar boils; once it nears the hard crack stage (300°F), it can reach the desired temperature quickly. Overheating will ruin the mixture.
Use clear extracts to maintain a clean amber appearance in your lollipops.
Add a single drop of food coloring for a pop of color or to match a theme.
Decorate with small dried edible flowers for a beautiful and elegant touch—make sure they are food-safe.
Work quickly when pouring the mixture into molds, as it hardens rapidly as it cools.
