Papaya Mango Popsicles

- 7 ounces mango fresh, about 1/2 to 1 mango
- 2 tbsp ginger fresh
- 2 cups papaya juice a blend of juice is fine.
- 1 tsp vanilla extract
- 1 tbsp corn starch blend with 1 tbps water to create a liquid form.
- 8 candied ginger optional
Add 1 tablespoon water to the corn starch to make a paste before adding it into the blender.
Next, add all of the ingredients into a blender and blend on high until they are fully combined and the texture is like a thick juice.
Pour the juice into a popsicle mold and add the sticks.
Freeze overnight until the popsicles are fully frozen.
If you prefer to add in a slice of candied ginger to the popsicles do that before freezing. This adds an even spicier flavor and a chewy texture in the middle.
