you can use baby arugula too

Regular extra virgin olive oil is good. You can also use a lemon infused olive oil, which is so good!

Instructions
In a bowl, combine the lemon juice, olive oil and salt and pepper. Stir and set aside.
Add the arugula greens in a salad bowl, pour the dress over the top before serving. Toss to coat the greens. Add the cheese over the top.
