This is one of the best split pea soup recipes! The ingredients simmer in one large pot and the soup is full of flavor. It's the perfect soup recipe year round.
1lbdried split peas rinsed and sorted to remove rocks and dirt
8ozsmoked hamalready cooked from the store
2largebay leaves
2tbspthymefresh and chopped
6 1/2cupschicken broth
2cups water
1tspsalt
1tsppepper
Instructions
Chop – First chop all of the vegetables and cube the ham.
Wash & Rinse Peas – It’s important to rinse the peas well as you want to remove any rocks or dirt that may have gotten in there.
Sauté – In a large pot, sauté the potatoes, onions, carrots and garlic with butter until they’re soft.
Combine – Add in the peas, ham, water, chicken broth, salt & pepper, thyme and bay leaf to the pot.
Boil – Bring the ingredients to a boil, then let them simmer, uncovered, for 1 1/2 hours.
Notes
The soup will thicken as it simmers. If it’s too thick, add more broth to the recipe.To make this soup vegetarian, swap out the chicken broth for vegetable broth and remove the ham from the recipe.
