Avocado Popsicle Recipe

- 1 1/2 ripe avocado buy two avocados and use 1 and 1/2 of the other.
- 2 tsp cornstartch
- 1 cup coconut milk not in the can, just plain coocnut milk.
- 1 cup sweetened condensed coconut milk in a can
- 1 cup grapefruit juice freshly squeezed
- 1/4 tsp salt
In a small saucepan heat the coconut milk and cornstarch together until the cornstarch has melted. Just until the mixture is warm.
Then, blend all of the ingredients together, including the warm coconut cornstarch mix, in a blender on high until rich and creamy.
Pour into a popscile mold and freeze over night.
To remove the popsicles, run warm water under the bottom of the mold for about 2 minutes. Then gently pull up on the stick to remove.
