I originally developed these avocado popsicles in partnership with California Avocados. They turned out so wonderful I had to share the recipe with you all.
Avocado seems like a strange flavor for a popsicle, but you would be pleasantly surprised by the sweetness and creaminess of these!
Avocado, coconut, and grapefruit have a flavor affinity and they pair together so well. The other great thing about these popsicles is that they’re dairy-free.
If you skip the white chocolate topping, the recipe for the popsicles is fully dairy-free.
How to Make Avocado Popsicles
The process is so simple, all you need is a good blender such as a Vitamix, a saucepan and a popsicle mold.
- In a small saucepan heat the coconut milk and cornstarch together until the cornstarch has melted. Just until the mixture is warm.
- Then, blend all of the ingredients together, including the warm coconut cornstarch mix, in a blender on high until rich and creamy.
- Pour into a
popscile mold and freeze over night.
The cornstarch is what keeps the popsicles creamy. It’s a little secret ingredient we add to our cream based popsicles.
It makes the popsicle so it’s not icy when you bite into it, which is super important for flavor and texture!

How to Choose the Perfect Avocado for the Popsicle
The almighty avocado! It’s such a magical fruit with so many benefits and ways you can use it. From savory to sweet.
When choosing an avocado for this recipe, it’s important you pick one that is ripe.
A ripe avocado will be darker in color and when you gently press on it, it will feel lightly soft. If it’s mushy soft, it’s too ripe and will be brown when you cut it open.
Make sure it’s a nice firm soft with a little give. This will blend nicely with the other ingredients.
How to Unmold the Popsicles
This part can be a little tricky and the last thing you want are broken popsicles after you have waited all night for them to freeze!
The best way to remove the popsicles is to run the bottom of the mold under warm water for about 2 minutes.
Gently pull on the popsicle stick to remove. If it still feels hard to get out, run the mold under water again. It will come out pretty easily when it’s ready.

Avocado Popsicle Recipe
Ingredients
- 1 1/2 ripe avocado , buy two avocados and use 1 and 1/2 of the other.
- 2 tsp cornstartch
- 1 cup coconut milk , not in the can, just plain coocnut milk.
- 1 cup sweetened condensed coconut milk , in a can
- 1 cup grapefruit juice, freshly squeezed
- 1/4 tsp salt
Instructions
- In a small saucepan heat the coconut milk and cornstarch together until the cornstarch has melted. Just until the mixture is warm.
- Then, blend all of the ingredients together, including the warm coconut cornstarch mix, in a blender on high until rich and creamy.
- Pour into a popscile mold and freeze over night.
- To remove the popsicles, run warm water under the bottom of the mold for about 2 minutes. Then gently pull up on the stick to remove.
wow, hadn’t ever, and I’ve seen a lot of creative popsicles, some savory, some just strange, but not avocado, great way to constitute it too with coconut milk and corn starch, really creative, thank you!
