I saw this amazing pineapple and watermelon popsicle mold and I was so excited to create Pineapple Coconut Rum boozy summer pops in them! How charming is that pineapple shape?! They would be perfect for a summer pineapple garden party!

They work really well too and you can play around with different ingredients to create delicious tropical flavors!

Since coconut and pineapple go so perfectly together, I decided to make a pineapple coconut combo with rum for an irresistible frozen treat for this hot summer we’re having!

I really like the tropical flavor combination with pineapple, orange, honey, and coconut milk. You can find the mold here!

How To Make Coconut Rum Pineapple Popsicles – Step By Step

  • Add all of the ingredients into a blender and blend until super smooth.
  • Pour into these popsicle molds using wooden popsicle sticks.
  • Freeze overnight.

An Easy Popsicle Recipe

These pineapple popsicles couldn’t be simpler! It takes 10 mins to prep a batch, you simply whip all the ingredients up in a blender and pour into the mold, then freeze. They are perfect make-ahead treats for BBQs and summer parties.

Top Tips For Coconut Rum Pineapple Popsicles

  • If you want super smooth pops, make sure you remove the middle of the pineapple.
  • Use A quality popsicle mold, like the one mentioned above.
  • For longer storage, wrap each individually in plastic wrap before storing it in an airtight bag or container.
  • Use fresh orange juice for best results.

Pineapple Coconut Rum Popsicles

Ingredients 

  • 5 slices pineapple, About 3/4 of a pineapple. If you want super smooth pops, make sure you remove the middle of the pineapple and only use the outside ring
  • 1/2 cup fresh orange juice
  • 1/2 cup coconut milk
  • 2 tbsp honey
  • 3 tbsp coconut rum
  • 1 tbsp coconut oil

Instructions 

  • Add all of the ingredients into a blender and blend until super smooth.
  • Pour into these popsicles molds using wooden popsicle sticks.
  • Freeze over night.

    These sound great other than I don’t like coconut oil – can I just leave it out or do I need to use a substitute?
