Margarita popsicles are my ultimate party trick. I make them with all kinds of fresh fruit like mango, strawberry, and watermelon. They’re sweet, a little boozy, and always the first thing to disappear at my summer parties.

Why You’ll Love These Margarita Popsicles

They work perfectly in frozen cocktail pouches: Traditional molds can’t handle too much booze, but pouches keep the slushy texture and make them easy (and fun!) to serve.

Endless fruit combos: Use my base recipe and swap in whatever fresh or frozen fruit you love – try it with mango like my frozen mango margarita!

Perfect for entertaining: Serve them poolside, at a picnic, or straight from the cooler on the beach. They’re portable, no-mess, and just so fun.

Ingredients for Margarita Popsicles

This is your base margarita popsicle formula. You can use it with any fruit:

Fruit: I used strawberries and blackberries, but you can swap in watermelon, mango, or blueberries. Try watermelon popsicles for a super juicy version or blueberry popsicles for a darker, sweet-tart flavor.

Tequila: Go for blanco or silver tequila for a clean, bright flavor. Want to switch it up? Mezcal gives it a smoky twist.

Triple Sec (or orange liqueur): Optional, but adds that classic margarita flavor.

Fresh Lime Juice: Balances the sweetness and keeps it tasting like a true margarita.

Sugar: Just a touch! Adjust based on how sweet your fruit is. You can also use honey or agave.

How to Make Margarita Popsicles

  1. Blend – Add all your ingredients to a blender and blend until totally smooth.
  2. Taste & adjust – Taste the mix before freezing! Fruit varies in sweetness, so add a little more lime or sugar if needed.
  3. Strain (optional) – For an extra-smooth popsicle, strain the mixture through a fine mesh sieve.
  4. Fill the bags – Pour the mix into ice pop bags, leaving about an inch of space at the top.
  5. Freeze – Freeze overnight or for at least 8 hours until firm.

Tips for the Best Margarita Ice Pops

Play with garnishes: You can drop in thin lime wheels or bits of fruit before freezing for a visual pop.

Taste before you freeze: Flavors mellow once frozen, so go a bit bolder with sweet, sour, or boozy notes.

Use frozen fruit to make it thicker: Frozen strawberries or mango chunks help give the mix a slushier consistency.

Freeze: Store in sealed pouches for up to 2 months. Lay flat to freeze evenly. Keep in a cooler with ice packs for travel.

Frequently Asked Questions

How much alcohol is in a margarita popsicle?

Each one has a little less than ½ oz of tequila, which keeps the texture perfect while still giving that classic margarita kick. If you want them stronger, serve with a salted rim and a tequila floater on the side!

Can I make them with no alcohol?

Yes! Just swap the tequila and triple sec for a splash of orange juice or elderflower syrup and use your favorite fruit. They’re still SO good.

What fruits work best?

Strawberries, mango, blackberries, blueberries, watermelon, raspberries, and even honeydew all work beautifully. Just keep the ratio of fruit to liquid the same. Want flavor inspiration? Try my raspberry margarita or margarita recipe collection for ideas.

Do I have to use popsicle bags?

You don’t have to, but I really recommend them! They’re super easy to serve, and perfect for on-the-go or entertaining. If you use a mold instead, I’d suggest cutting back slightly on the tequila to make sure they freeze solid.

Notes

  • Use any fruit! This margarita base works with strawberries, blackberries, watermelon, mango, and more—just swap in your favorite.
  • Adjust to taste. Taste the mix before freezing and tweak the lime, sugar, or tequila to your liking (flavors mellow once frozen).
  • Go light on the booze. Too much alcohol keeps pops from freezing solid—if skipping the pouch, reduce the tequila slightly for a firmer pop.
