Blueberry Popsicles Ingredients
Blueberries – Fresh or frozen both work! Roasting brings out their natural sweetness and creates that deep, juicy flavor.
Honey – A natural sweetener that caramelizes beautifully when roasting. You can also use maple syrup if you prefer.
Crème fraîche – This thick, slightly tangy cream makes the popsicles extra smooth and rich. Greek yogurt or sour cream can be used in a pinch, but crème fraîche really elevates the flavor.
Whole milk – Adds a light creaminess and keeps the base smooth. You could sub with coconut milk for a dairy-free twist.
Heavy cream – For an ultra-creamy texture. Half-and-half will work too!
Cornstarch – This is my secret to popsicles that are creamy, not icy. It thickens the mixture just enough to give it a luscious mouthfeel.
Vanilla extract – A splash of pure vanilla adds warmth and balances the tartness of the berries.
How to Make Blueberry Popsicles
Roast the blueberries – Preheat your oven to 375°F. Line a baking sheet with parchment or foil and scatter the blueberries on top. Drizzle with honey and roast for about 10–15 minutes, until they’re juicy and popping open. Let them cool completely.
Blend the cream base – In a blender, combine the crème fraîche, whole milk, cream, cornstarch, vanilla, and remaining honey. Blend until smooth and creamy.
Fill the molds – Add a spoonful of roasted blueberries to each popsicle mold. Then pour in the cream mixture. Give each mold a gentle swirl with a skewer or butter knife to mix the berries in just a bit.
Freeze – Leave a little room at the top of the mold (about ¼”) to allow for expansion. Insert popsicle sticks and freeze overnight.
Unmold and enjoy – Run warm water over the outside of the molds for 30 seconds to loosen, then gently pull to release.

Roasted Blueberry Popsicles with Crème Fraîche
Ingredients
- 2 cups blueberries
- 2 tablespoons honey
- 5 ounces Crème fraîche
- 1 cup whole milk
- 2 tsp cornstarch
- 1/2 cup cream
- 1/4 cup honey
- 1/4 teaspoon vanilla
Instructions
- Preheat the oven to 375 degrees
- Line a baking sheet with tinfoil or parchment paper and scattered the blueberries on it
- Drizzle with honey and bake until juicy and they pop open, about 10-15 minutes
- Remove and let cool, set aside
- In a blender add the Crème fraîche, milk, cream, cornstarch, vanilla and ¼ cup honey and blend until fully incorporated.
- Add a spoonful of blueberries to each popsicle mold
- Pour the cream mixture into the molds and give it a little stir
- Place in the freezer overnight
- To remove the popsicles, run the bottom under lukewarm water for 30 seconds
