Fun fact about this recipe – I made these on a segment on Home & Family TV! It was such a fun day and I got to make two of my favorite popsicle recipes!
Growing up we spent a lot of time at my grandparents’ house and I remember my grandma always having chocolate fudgsicle in her outdoor freezer. The fudge pops were so good and satisfying, I would go back for a 2nd and, oddly enough, no one stopped me!
That might be why I have such a sweet tooth now… I finally perfected a recipe that is quickly becoming my son Romeo’s favorite. I’ve now made these Chocolate Fudge S’Mores Popsicles several times and they turn out so creamy and delicious, they’re almost foolproof!
How to Make Chocolate Popsicles (Fudgesicles)
Ingredients
(full recipe in recipe card below)
- Cornstarch
- Whole milk
- Heavy cream
- Granulated sugar
- Unsweetened cocoa powder
- Vanilla extract
- Salt
Pro Tip – The cornstarch in the recipe makes popsicles less icy and more creamy. Cornstarch acts as a stabilizer and keeps the liquid ingredients in the popsicle from moving and forming just chunks of ice.ย
- In a small sauce pan, add the corn starch and ยฝ cup whole milk and simmer until corn starch is melted. Stir while itโs simmering.
- Add in the other half of the whole milk, 1ยผ cup heavy cream, sugar, cocoa powder, and salt and bring to a soft boil while whisking until everything is combined and sugar is melted. About 1 minute.
- Remove the mixture from the heat and transfer to a large measuring cup with a spout.
- Stir in vanilla.
- Pour into popsicles molds and add in the sticks.
- I use these popsicle molds to make the popsicles.
- Freeze overnight.
- Remove from molds by running warm water on the bottom.
- Dip into marshmallow fluff and add crushed graham crackers on top.
- You can also torch the marshmallow fluff too!
Creamy Fudge Popsicles!
There is one secret ingredient I use to keep them creamy… Cornstarch! It’s the secret ingredient to keeping the popsicles creamy and not icy. It’s what gives it that soft, creamy texture when you bite into it.
You would think since it has heavy cream and whole milk that would be good enough, but those can tend to freeze over icy.
So the cornstarch helps keep them creamy! I use it in my ice cream recipes too, like this raspberry cheesecake swirl.
S’mores On Your Fudge Popsicle!
You can turn these delicious fudge popsicles into S’mores, which might be the best dessert on the planet! I topped them with marshmallow fluff and then torched it and added graham crackers.
I can’t even tell you how good it is! The fluff doesn’t stay on well, so this is something you do and eat right away.
You can also dip the fudge popsicles in melted white chocolate, that has been cooled a little, and then add mini-marshmallows and graham crackers to them as well.
