Dates: Medjool dates are the best here—they’re soft, naturally sweet, and just the right size to stuff. Make sure they’re pitted or pit them yourself before you start.

Goat Cheese: That creamy, tangy goat cheese is the magic inside. I love using it in everything from these to my goat cheese dip and baked brie. If you’re not a goat cheese fan, try blue cheese, whipped ricotta, or even creamier dips like this one.

How to Make Goat Cheese Bacon Wrapped Dates

1. Prep the dates: Slice each Medjool date lengthwise on one side and remove the pit (if they’re not already pitted).

2. Add the goat cheese: Scoop about a teaspoon of goat cheese into each date. I like to mash 4 ounces in a small bowl first to soften it up—it’s easier to stuff that way. The dates won’t close all the way, and that’s totally fine!

3. Wrap with bacon: Cut each slice of bacon in half. Wrap the bacon around the stuffed date and secure it with a wooden toothpick right through the center.

4. Bake: Place them on a parchment-lined or foil-lined baking sheet. Bake at 350°F for 10 minutes, then flip each one using the toothpick and bake for another 10–15 minutes until the bacon is golden and crisp.

5. Serve warm! These are so good fresh out of the oven. I usually plate them right away and let everyone dive in.

Ingredients 

  • 18 pitted dates
  • 9 slices bacon
  • 4 ounces goat cheese
  • 18 toothpicks

Instructions 

  • Preheat the oven to 350°F. Line a baking sheet with tin foil for easy cleanup.
  • Slice each date lengthwise.
  • Spoon about 1 teaspoon of goat cheese into each date. They won’t close completely, and that’s okay!
  • Cut the bacon slices in half to make 18 shorter pieces.
  • Wrap each stuffed date with a half slice of bacon and secure it with a toothpick.
  • Place the bacon-wrapped dates on the prepared baking sheet.
  • Bake for 10 to 12 minutes, then carefully flip each one using the toothpick
  • Bake for another 10 to 15 minutes, or until the bacon is crispy and golden brown. Start checking around the 10-minute mark to avoid overcooking.
  • Let them cool for a few minutes and serve warm!

Notes

  • Stick with regular bacon. Thinner slices cook faster and wrap around the dates more easily, so you’re not left with chewy, underdone bacon.
  • Use toothpicks to hold everything together. They help keep the bacon in place while baking and make flipping super easy.
  • Line your pan. Foil or parchment paper will catch the drips and save you a major cleanup job later.
  • Keep an eye on them. After you flip, the bacon can go from perfectly crispy to too dark pretty quickly—start checking after 10 minutes.
  • Level them up with a drizzle. Right after baking, add a little balsamic glaze, hot honey, or even a maple-bourbon sauce for an extra flavor hit.
