Instructions
Preheat the oven to 350°F. Line a baking sheet with tin foil for easy cleanup.
Slice each date lengthwise.
Spoon about 1 teaspoon of goat cheese into each date. They won’t close completely, and that’s okay!
Cut the bacon slices in half to make 18 shorter pieces.
Wrap each stuffed date with a half slice of bacon and secure it with a toothpick.
Place the bacon-wrapped dates on the prepared baking sheet.
Bake for 10 to 12 minutes, then carefully flip each one using the toothpick
Bake for another 10 to 15 minutes, or until the bacon is crispy and golden brown. Start checking around the 10-minute mark to avoid overcooking.
Let them cool for a few minutes and serve warm!
Notes
Stick with regular bacon.
Thinner slices cook faster and wrap around the dates more easily, so you’re not left with chewy, underdone bacon.
Use toothpicks to hold everything together.
They help keep the bacon in place while baking and make flipping super easy.
Line your pan.
Foil or parchment paper will catch the drips and save you a major cleanup job later.
Keep an eye on them.
After you flip, the bacon can go from perfectly crispy to too dark pretty quickly—start checking after 10 minutes.
Level them up with a drizzle.
Right after baking, add a little balsamic glaze, hot honey, or even a maple-bourbon sauce for an extra flavor hit.
