Wheel of Brie Cheese – A round, soft cheese that’s typically made from cow’s milk. It’s a popular cheese for baking and can be found in most grocery stores.

Honey – Adds sweetness to the cheese. It’s a great way to balance out the flavors in the dish. Use good quality, local honey.

Fresh Thyme or Fresh Rosemary – Use any fresh herb you prefer or have on hand. Herbs add a variety of flavors to cheese, depending on the type of herb you use. Some common herbs that are used to flavor cheese are rosemary, thyme, and basil.

Pepper – Fresh pepper adds a bit of heat and spice to the cheese. It’s a great way to add some flavor to the dish without making it too spicy.

How to Make Baked Brie

1. Line a small baking dish or ramekin with parchment paper (or use a mini cast iron skillet—so cute for serving!).

2. Place the brie wheel in the dish and make shallow crosshatch cuts on top. This helps the heat escape and turns the cheese into melty, golden lava.

3. Drizzle with honey and sprinkle fresh thyme and a little cracked black pepper on top.

4. Loosely cover with foil and place the dish on a parchment-lined baking sheet (just in case anything bubbles over).

5. Bake at 375°F for 10 minutes, then remove the foil.

6. Bake another 10 minutes, uncovered, until the top is just golden and the cheese is melted and bubbly.

Tips for Making the Best Baked Brie

Time it right: I like to pop the brie in the oven about 10 minutes before guests arrive so it’s warm, gooey, and ready to wow the second they walk in.

Serve it warm: Baked brie is best fresh out of the oven, but it’ll stay melty and dreamy for about 30 minutes if needed.

Need to reheat? Just bake it again at 350°F for about 5 minutes until it’s soft and bubbly.

Use a soft, ripe wheel: Any affordable brie from the grocery store will do the trick. Look for one that feels slightly soft to the touch.

Serving size: One 8-ounce wheel serves about 4 people—but let’s be honest, it disappears fast so maybe double it!

It’s baked in the oven and the result is a gooey, molten wheel of cheese that has a creamy texture and is absolutely delicious. It’s almost like a super simple found hack and is the perfect party food.

Ingredients 

Baked Brie

  • 8 ounces brie, 1 wheel brie cheese
  • 1 tbsp honey
  • 2 tsp fresh herb, thyme or rosemary
  • 1 tsp pepper

Marinated Olives

  • 3/4 cup green olives, pitted
  • 1/3 cup olive oil
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest

Instructions 

Baked Brie

  • Prepare a baking dish with parchment paper. 
  • Make small slits into a crosshatch pattern over the top of the cheese. This allows heat to escape as it melts and the cheese to become like lava! 
  • Drizzle with honey and add fresh thyme and pepper over the top.
  • Loosely cover with tinfoil. 
  • Place it on a baking sheet lined with parchment paper.
  • Bake at 375 degrees for about 10 minutes.
  • Remove the foil and bake for another 10 minutes until the top is a very light golden brown and the cheese is melted and bubbly.

Marinated Olives

  • While the brie is baking make the olives.
  • In a skillet, over low heat add all of the ingredients.
  • Simmer until everything is warm and soft.
  • Pour the warm olives over the bubbly melted cheese and serve.

Notes

Prep the cheese and have it ready to go in the oven 10 minutes before guests arrive. That way it’s perfectly melty and delicious to eat right away.
If you need to reheat your baked brie, place it back on the baking sheet and bake at 350 degrees for about five minutes, or until warmed through.
Baked brie is best served immediately after it’s been baked. However, if you need to make it ahead of time, it will stay gooey for about 30 minutes.
Top the melted cheese with anything you love—seasonal fruit, berries, roasted nuts, or savory extras like olives or chili crunch.
