What Is Whipped Ricotta?

Whipped ricotta is ricotta cheese that has been blended or whipped until it becomes smooth, airy, and creamy. Whipping ricotta removes its grainy texture and creates a light, spreadable dip that’s often served with olive oil, honey, herbs, or toasted bread.

It’s a classic Italian appetizer and is often served as part of an aperitivo spread or antipasto platter.

I love this dip so much (almost as much as my Green Goddess Dip!) that I’ll be serving it at every gathering! You can also use this dip to make whipped ricotta toast, as a topping for zesty lemon ricotta pancakes or pasta, as a side dish with a fruit platter, or even serve it with your favorite cake!

Whipped Ricotta Dip Ingredients

Ricotta, olive oil and salt in small bowls.

This recipe is made with simple ingredients you can find at your local grocery store.

Whole Milk Ricotta – Use good quality whole milk ricotta for the best flavor, texture, and results.

Salt – Salt helps to enhance all of the flavors, so don’t skip it!

Olive Oil – Use good quality olive oil for the best flavor. A good quality extra-virgin olive oil will be best.

Honey – We use about a tablespoon of honey to drizzle over the top. It adds the best sweetness and compliments the cheese so well. You can use hot honey if you want a little spice.

How to Make Whipped Ricotta Dip

This creamy whipped ricotta dip comes together in just a few minutes and only requires a handful of ingredients.

1: Beat the cheeses
Add the ricotta and softened cream cheese to a mixing bowl. Using an electric mixer, beat until the mixture becomes light, smooth, and fluffy.

2: Add the salt
Sprinkle in the salt and continue beating for another few seconds until everything is well combined.

3: Drizzle in the olive oil
Turn the mixer to low and slowly drizzle in the olive oil while mixing. This helps create an ultra-smooth, creamy texture.

4: Serve and garnish
Spoon the whipped ricotta onto a serving plate or shallow bowl. Drizzle with honey and finish with fresh thyme for a simple, elegant touch.

Eden’s Recipe Tips

Here are my expert tips to make this recipe the best it can be:

Use whole milk ricotta. It has a richer flavor and whips into a much creamier texture than low-fat ricotta.
Let the ricotta sit at room temperature for about 10 minutes before whipping. This helps it blend more smoothly.
Whip the ricotta for at least 60 seconds so it becomes light, airy, and fluffy.
Slowly drizzle in the olive oil while mixing to create an ultra-smooth texture.

Garnishes for Whipped Ricotta

Garnishes are a great way to dress up this whipped ricotta dip. Here are some ideas:

  • Freshly chopped herbs like fresh basil, rosemary, or thyme
  • Toasted pine nuts or pistachios
  • Lemon zest or orange zest
  • Olive oil or Chili crunch
  • Sun-dried tomatoes
  • Freshly cracked black pepper

What to Serve With Whipped Ricotta Dip

Whipped ricotta dip pairs beautifully with many different foods and makes an easy addition to any appetizer spread.

Serve it with:

• toasted baguette slices
• focaccia or ciabatta
• crackers
• pita chips
• fresh vegetables like carrots and cucumbers
• roasted tomatoes
• figs or grilled peaches

It’s also delicious spread on toast, crostini, or served as part of a cheese platter or charcuterie board.

How to Store

Leftover whipped ricotta can be stored in an airtight container in the refrigerator for up to 5 days. However, it’s best eaten the same day it’s made.

FAQs

What Is Ricotta Cheese?

Ricotta is a soft Italian cheese made from whey, the liquid left over from making other cheeses. It’s mild, creamy, and often used in desserts and savory dishes.

Can I use low-fat ricotta for this whipped ricotta dip?

We recommend using whole milk ricotta for the creamiest, most delicious results. This will result in a creamier texture when the ricotta is whipped.

What does whipped ricotta taste like?

Whipped ricotta dip is creamy, salty, and slightly tangy. The whipped texture makes it light and fluffy, which gives it a texture similar to whipped cream.

Why is my whipped ricotta runny?

This could be because it wasn’t whipped enough. To fix this, continue to whip until it’s light and fluffy. If the dip is still too runny, add a few more tablespoons of ricotta cheese to thicken it.

Can you whip ricotta in a food processor?

Yes. A food processor works very well for whipping ricotta. Simply blend the ricotta with olive oil and salt for about 30–60 seconds until smooth and fluffy.

Can whipped ricotta be made ahead of time?

Yes. Whipped ricotta can be made up to 2 days in advance and stored in an airtight container in the refrigerator. Bring it to room temperature and drizzle with fresh olive oil before serving.
