This olive oil cake is a firm favorite of ours! Rich, dense and moist, it’s perfect for dessert, a snack or even brunch – why not! The edges are wonderfully crispy from the skillet and the orange glaze is sublime. Oh yes, and it’s really quick to prep!
I have to admit, I’m pretty into this olive oil cake. This is the second time I’ve made it because we ate the entire thing before I could photograph it the first time.
It’s an incredibly moist and dense cake with an intense olive oil flavor… you must like the taste of olive oil to enjoy it! The cast iron gives it a crispy edge, which I love. And the delicious orange glaze is literally and figuratively the icing on the cake!
This might just be one of my favorite cakes since it’s not very sweet and can actually be eaten without the glaze, as my mother-in-law prefers it!
This was the perfect cake to make because I still have a restaurant-sized box of homemade olive oil from my hopefully-soon-to-be-sis-in-law (hint; )) and a giant bag of fresh oranges pulled from our friend’s tree.
It’s pretty good for brunch too… if you like cake for breakfast.

Is Olive Oil Good For Cakes?
Even fans of butter can’t deny that olive oil in cakes is rather awesome. A lot of restaurants without a pastry chef will have olive oil cakes on the menu as they are so easy to put together.
They are tender, impossibly moist, fragrant, and the perfect platform for fruit or a fruity glaze. But make no mistake, the olive oil comes through in the taste, so you have to like olive oil in the first place, but it works perfectly.
Skillet Olive Oil Cake – An Easy Dessert
An easy dessert, an easy weekend brunch, an easy ‘ I deserve a treat’ treat. Whenever you want to eat this, it’s going to be quick and simple to whip up! The cake is just mixed ingredients in one bowl then poured into the skillet, easy! And the delicious glaze is just four ingredients mixed together. All in all it takes 10 minutes to prep. Perfect for any last minute gatherings or last minute cravings.
A Delicious Skillet Cake
Skillet cakes go way back. As the home iron oven became increasingly commonplace in the country, flat-bottomed frying pans supplanted the spider and the term skillet cake emerged.
In the early 1920s, a synonym emerged for skillet cakes with a caramelized fruit bottom โ upside-down cake. This isn’t an upside-down cake per se, but the skillet gives this olive oil cake a lovely crispy edge and keeps the center moist. Best of both worlds!
Top Tips For Skillet Olive Oil Cake With Orange Glaze
- Use a preheated oven.
- Don’t overmix the cake mix.
- Make sure the iron skillet is lightly greased.
- Let the cake cool before pouring glaze over it.
