Instructions
In a large sieve, quickly rinse the rice then add it to the slow cooker.
Add the rest of the ingredients to the slow cooker.
Cook the rice on high for 30 mins to 1 hour. Check the rice after 30 minutes and see if it's fluffy and fully cooked.
Serve the rice in a large bowl and add more scallions over the top.
Notes
You can double this recipe to serve a crowd. Cooking time will go up. Add chicken or fish and make coconut rice bowls. Rinse the rice to keep it from clumping.
