Cute, boozy strawberry jello shots filled with vanilla jello, dipped in chocolate, and topped with sparkle. An easy party treat that looks fancy but takes very little effort.
Wash and dry the strawberries. Cut off the tops and carefully hollow out the centers, making sure there are no holes in the bottom.
Place the strawberries cut-side up in a mini muffin tin to keep them upright.
Add the gelatin to a medium bowl. Pour the boiling water over it and whisk until completely dissolved and smooth.
Whisk in the vodka and vanilla extract until fully combined.
Let the mixture sit for about 1 minute so it is not piping hot.
Carefully pour the jello mixture into the strawberries.
Refrigerate for 2–3 hours, or until fully set.
Dip the strawberries in melted chocolate. While the chocolate is still wet, sprinkle with edible glitter and strawberry powder.
Let the chocolate set before serving.
Notes
Use large strawberries so they’re easier to fill and hold more jello.Letting the jello cool slightly before pouring helps keep the strawberries firm.These are best served the same day. You can make them one day ahead, but they’re freshest the day they’re made.

Store strawberry jello shots in an airtight container in the refrigerator for up to 2 days, though they’re best enjoyed within 24 hours.
