Instructions
Toast marshmallows under the broiler until golden.
Simmer water + sugar until dissolved.
Add marshmallows, stir gently, remove from heat.
Stir in vanilla and let cool.
Let sit 10 minutes so they marshmallows separate.
Strain through a mesh sieve into a glass jar.
Notes
Toast the marshmallows until deeply golden for the best flavor.
Mini marshmallows melt more evenly than large marshmallows.
Letting the syrup sit before straining helps it separate and stay smooth.
Strain through a fine mesh sieve for a pourable, lump-free syrup.
The syrup will thicken slightly as it cools.
If it thickens too much in the fridge, gently warm or stir in a splash of hot water.
Store in the refrigerator for up to 2 weeks.
