I think we can pretty much call these healthy, right?! A bit of dark chocolate is always good for the soul and of course coconut oil is all around good for you, so eat up!

To give the truffles a pretty topping, we rolled each one in coconut shavings and a strawberry dust we made using freeze-dried strawberries. You can also roll them in chopped nuts too or your favorite topping!

Enjoy!

How To Make

  • Over a double boiler melt the chocolate, water and coconut oil on low, stirring constantly.
  • Stir in vanilla and sea salt.
  • Transfer the mixture into a nonstick 8 x 8 pan.
  • Refrigerate for at least 2 hours. You can leave it overnight as well, just cover it.
  • Scoop 1-inch balls and roll in coconut shavings or crumbled freeze-dried berries.
  • Before serving, let them sit at room temperature

Homemade Coconut Truffles

These coconut truffles are so flavorsome, with their rich dark chocolate and sweet coconut hits, and with only 5 good quality ingredients, they are the healthier truffle!

I’ve used pure vanilla extract, not artificial. The chocolate is 70% cocoa, then mix with a touch of coconut oil, water and sea salt and voila! Roll in nuts, dried strawberries or coconut shavings. Homemade is the way to go!

Chocolate Truffle Toppings

You can really have fun when coating your truffles! Here are some ideas for creative coatings!

Matcha (green tea powder): Coating chocolate truffles in matcha gives a rich herbal green tea flavor. And the vivid green color gives these truffles a stunning look.

Pecans: Finely chopped pecans will add a buttery, nutty crunch to every little bite. This simple coating is one of my personal favorites.

Peppermint: Rolling a chocolate truffle in crushed peppermint candies is a great way to have a chocolate-minty combination!

Pixy Sticks:  Use blue pixy sticks and the result is excitingly colorful, rich, and tangy.

Ginger: Finely chop crystallized ginger then pressed it into to the truffles. The small pieces adhered to the truffles quite nicely. Crushing up hard candied ginger would work well too.

Sprinkles: The mixture of color and texture of sprinkles adds a lot of character and crunch to these chocolate treats.

Espresso: Perfect for the coffee lover, rolling truffles in espresso adds a bold flavor.

Cocoa and Chili Powder: Many truffles are simply rolled in cocoa powder, I added a few pinches of chili powder to the cocoa, which give this coating a touch of spice.

White Chocolate: Perfect for the chocolate lover, the contrast of white chocolate shavings makes these truffles really standout.

Cinnamon Sugar & Cayenne Pepper: Adding a few pinches of cayenne pepper to cinnamon sugar will make these truffles taste like Mexican hot chocolate.

These coconut truffles make for the perfect gift or Valentine’s day surprise. They look so gorgeous and taste amazing. Especially if you coat them in different ingredients, a real chocolate rainbow of goodies!

And the really great part? They are a cinch to make, your recipient will think you spent wayyyy more time on these, it’s a win win!

Just melt, mix, stir and refrigerate. Then scoop and roll them in your favorite coatings, it really quite therapeutic.

Recipe Tips

Use pure vanilla extract, if available to you. The flavoring is much more subtle and natural.

Use at least 70% dark chocolate.

Use a non stick pan.

Make sure to refrigerate for at least 2 hours.
