Oh my! THESE little churro ice cream sandwiches are the way to go! The churro is so tasty and creates the perfect doughy, crunchy swirl to make a sandwich with! I had never made churros before and they were always on my list. They look intimidating to make, but they’re actually SO easy! Making the dough is interesting, because you make it in a sauce pan over heat, which seems complicated, but it’s very simple. And of course frying anything in oil is always fun… ha! For the piping tip I used an Ateco star in size 4, which you can find here. One thing I would suggest is using a coated piping bag, rather than a plastic bag, since mine exploded because the dough is thick! Also, the churros don’t have to be super hot when serving these, they still taste just as good after they cool a bit. That means you can make them ahead of time to serve later!
I used this recipe and added 2 tablespoons of sugar to the dough. I also made the swirls on parchment paper before placing them in the hot oil. With a little flour and a spatula I was able to easily remove them from the parchment paper and into the oil. When making them, pipe the dough close together to create the circle so it will stay intact when fried.
Then just made the sandwiches with two artisan ice creams from Whole Foods. There are so many flavors you can use that would go perfectly with these! Dulce de Leche, chocolate, fruity flavors, it’s endless.
