Olive Oil Cast Iron Cake with Orange Glaze

OliveOilCake1OliveOilCake2 I have to admit, I’m pretty into this olive oil cake. This is the second time I’ve made it because we ate the entire thing before I could photograph it the first time. It’s an incredibly moist and dense cake with an intense olive oil flavor… you must like the taste of olive oil to enjoy it! The cast iron gives it a crispy edge, which I love. And the delicious orange glaze is literally and figuratively the icing on the cake! This might just be one of my favorite cakes since it’s not very sweet and can actually be eaten without the glaze, as my mother-in-law prefers it! This was the perfect cake to make because I still have a restaurant-sized box of homemade olive oil from my hopefully-soon-to-be-sis-in-law (hint hint ; )) and a giant bag of fresh oranges pulled from our friend’s tree. It’s pretty good for a brunch too… if you like cake for breakfast.

Olive Oil Cast Iron Cake
Adapted Via Food52
2 cups flour
1 1/2 cups sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/3 cups olive oil
1 cup whole milk
3 eggs
1/2 cup fresh-squeezed orange juice
1/4 cup grand mariner
1 tablespoon orange zest

Directions
Preheat the oven to 350 degrees. Combine the dry ingredients into a medium bowl and set aside. In a mixing bowl with a paddle attachment add all of the wet ingredients and beat until smooth. On slow speed, add in the flour mixture and orange zest. Beat on high for a few seconds until smooth. Don’t over mix.

Pour the batter into a lightly greased cast iron skillet and bake for about 35 minutes or until done.

Orange Glaze
2 1/2 cups powdered sugar
1/4 cup orange juice
1/2 teaspoon Grand Mariner
2 tablespoons orange zest

Directions
Add all of the ingredients into a mixing bowl and beat on high until smooth. Add more orange juice or powdered sugar to the perfect glaze consistency. Let the cake cool a bit, then pour the glaze over it.
