This coca cola cake is a classic, and iconic, sweet treat! It’s moist and chocolaty, perfect for summer parties or just if your feeling a bit like some good ol southern comfort food! Plus, it’s an easy one sheet cake – bonus!

A Coca-Cola cake is a classic Southern recipe. It’s made using actual Coca-Cola and mini marshmallows in the batter! Sounds crazy right?! It’s very moist and the frosting is a rich chocolate fudge glaze. It’s pretty much the perfect dessert for a game day celebration, a BBQ or when you’re in the mood for a little comfort food! 

The trick is to not over bake it. Remove it before the center is fully cooked. Then let it sit and cool. You’ll be flipping it upside down so don’t worry if the center slightly caves in. It just means it’s going to be gooey and delicious!

How To Make Classic Coca Cola Cake – Step By Step

Classic Coca-Cola Cake Recipe

  • Preheat your oven to 350 degrees.
  • In a large pot, bring the butter, Coca-Cola and cocoa powder to a boil whisking until combined. Remove from heat.
  • In a separate bowl, combine the flour, sugar, mini marshmallows and salt.
  • Quickly add the flour mixture into the pot and mix until combined and marshmallows are almost melted. It’s okay if some marshmallows are not completely melted.
  • In a liquid measuring cup, whisk together eggs, buttermilk, baking soda and vanilla. Add into the pot and continue to fold the mixture until everything is combined.
  • Line a baking sheet with parchment paper and rub with butter. Pour the batter into the pan.
  • Bake in a 350 degree oven for about 25 minutes. Remove before the center is fully cooked! You don’t want a toothpick to come out clean… you want it to come out with a little cake on it.
  • Let it cool completely, then place it upside down on a platter until the cake tips out.

Chocolate Fudge Icing

  • In a saucepan heat the butter, cocoa powder and milk until the butter
  • has melted. Remove from heat and add in the vanilla and powdered sugar.
  • Mix very well. You can also use an electric mixer to really mix it up. The texture should be smooth.

Ingredients 

Classic Coca-Cola Cake Recipe

  • 1 cup Coca-Cola
  • 1 cup butter or margarine, softened
  • 1/4 cup cocoa
  • 1 3/4 cups sugar
  • 2 cups all-purpose flour
  • 2 cups miniature marshmallows
  • 1/8 teaspoon salt
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda

  • 3 tablespoons whole milk
  • 1 teaspoon vanilla
  • 1 lb powdered sugar

      Hi! What a cute cake that is, haha! The Coke cake can be a little gooey, but I do think it could work. I haven’t tried it in a round pan so I’m not sure how much it would make. Not sure it would make enough to do two round cakes to stack… The frosting is very good and looks like it would be perfect for that cake. If you make it, share a picture!!
