These soju cocktails are delicious, refreshing, and packed with fruity flavors, like watermelon and pineapple. Plus they’re easy to make and you can make them ahead of time. They’re perfect cocktails for picnics or beach days!

There’s a spot in LA that serves Soju and Sake fruit cocktails, and after trying a few, I had to recreate them at home. I personally love them with Soju, but Sake works beautifully too!

These make-ahead cocktails are such a fun way to serve drinks when entertaining. You can prep them in advance, store them in the fridge, and pass them out in 8oz jars with lids as guests arrive – just give them a quick shake and they’re ready to go!

Soju and Sake are both amazing in cocktails if you’re looking for something light and a little different. Soju is a Korean spirit made from rice, wheat, or barley, and Sake is a Japanese rice wine. I’m a fan of unfiltered Sake – it’s a little sweeter and has the perfect smooth finish.

Tips for Making Sake and Soju Cocktails

  • Ideally use the freshest juice possible.
  • Use as good a quality soju & sake as possible.
  • For the pineapple sake cocktail, if making ahead of time, let the ginger and pineapple infuse together in a container, placed in the fridge.
  • Serve the soju and sake cocktails in jars with lids, so you can shake just before serving.

Make Ahead Soju & Sake Fruit Cocktails

Ingredients 

Pineapple Ginger Sake Cocktail

  • 6 cups pineapple juice, fresh or store bought
  • 6 large chunks of fresh ginger, roughly chopped
  • 2 tsp turmeric spice
  • 1 bottle unfiltered Sake, 1 1/4 oz for each cocktail

Watermelon Lime Soju Cocktail

  • 1 medium watermelon
  • 2 limes
  • 1 bottle soju

Instructions 

Pineapple Ginger Sake Cocktail

  • If you know you’ll be making these a few days ahead of time, I would toss the ginger into a bottle with 6 cups pineapple juice and let it infuse that way. Then add in the turmeric and shake. If you’re doing it quickly, heat the pineapple juice, ginger and turmeric in a large pan and bring to a boil, whisking. Simmer for about 20 minutes, then let it cool back to room temp.
  • To make the cocktail, pour 2/3 cups juice into each 8oz glass jar. Then add in 1 1/4 oz unfiltered sake. Close the lid and shake. Then store in the refrigerator until cold before you serve.

Watermelon Lime Soju Cocktail

  • Cut the watermelon in half and scoop out the inside into a blender. Blend on high until it's liquid.
  • Strain through a mess strainer into a bowl with a spout. Then add in fresh lime juice from 2 1/2 limes.
  • Pour 2/3 cup juice into each 8oz glass jar.
  • Add in 1 1/4 oz (or more if you want!) Soju and shake. Store in the fridge until cold and then serve!
