The Most Delicious Chocolate Chip Cookie Pie Recipe


This is the most delicious, warm and gooey chocolate chip cookie pie recipe, with a shortbread cookie crust! It’s one of my favorite pies of all time and every bite tastes better than any old cookie by itself.

I tried my first chocolate chip cookie pie when we were in Knoxville, Tennessee visiting for work. Not surprisingly, I actually really liked Knoxville! It felt warm and comfortable there and I truly adore the southern hospitality. And they have chocolate chip cookie pie, which is the best on the planet. I was inspired to make my own cookie pie recipe with a cookie shortbread crust and it turned out incredible! It’s gooey, chocolatey, buttery and every bite is pure cookie heaven!

The shortbread cookie crust is so easy and requires zero rolling! The dough is made with butter, flour, confectioner’s sugar, vanilla extract and baking powder and is pressed into the pie pan, eliminating the rolling process.

To make a nice edge with the crust, press the dough up against the sides and then mold it to the pie pan. Just go with the shape of the pie dish you’re using and it makes it easy to create a nice crust. The crust is baked in a preheated 350 degree oven for about 10 minutes. Then, let it cool before you add the chocolate chip mixture to it.

How to Make a Chocolate Chip Cookie Pie

This recipe is fairly simple. You beat the butter until fluffy and then beat eggs in and add in both sugars. We used both 3/4 cup brown and 1/4 cup granulated sugar for this recipe. Add in the vanilla extract and next the dry ingredients and then you’ll spread the mixture over the shortbread crust. I seriously love this pie!

I can’t get over how gorgeous the pie is when it’s fresh out of the oven. Not only does the house smell like a cookie factory, but the pie looks like it’s out of a magazine! It’s beautiful!

Quick tip – Since this is technically a pie and not a cookie, it doesn’t have the consistency of a cookie. It’s more gooey like the center of a warm chocolate chip cookie and has a pie texture to it. I personally think it’s better than a cookie!

Serve this gooey chocolate chip cookie pie warm with whipped cream or vanilla ice cream!

Shortbread Cookie Crust

  • 2 sticks unsalted butter, room temperature
  • 2 cups flour
  • 1/2 cup confectioners sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder

Chocolate Chip Pie Filling

  • 1 1/2 sticks unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1 cup flour
  • 1 cup semisweet chocolate chips


Shortbread Pie Crust

  1. Start with the crust by beating the butter until fluffy and add in the sugar. 

  2. Then, add in the flour and lightly mix. Add in the extract and baking powder and mix until mixture is crumbly. 

  3. Press into a pie dish, up the sides and make a nice crust and bake in a preheated 350 degree oven for 10 minutes. 

  4. Let the crust cool before adding the filling. 

Chocolate Chip Cookie Pie Filling

  1. To make the chocolate chip cookie pie filling, beat the butter, brown sugar and white sugar in a blender until light and fluffy.

  2. Add in the eggs and continue to beat. Adding vanilla and salt. 

  3. Slowly add in the flour and blend on low. Add in the chocolate chips.

  4. Pour the batter in the pie crust and bake in a 325 degree oven for 30 minutes until the pie is golden brown. Do not overtake, remember this is a pie not a cookie, so you want it to be more gooey like a pie.

    I plan on making this for my fiance’s birthday on Sunday. I have a question regarding preparation. Can I make it ahead of time, keep it in the fridge, and then bake it on Sunday?

      Hi Samantha! We think that would work. It might affect the cooking time though since it will be cold. Just keep checking on it and make sure you don’t over bake. It should have a gooey pie texture not a cookie texture.
