Brookies Ingredients

Ingredients to make easy Brookies recipe.

You can make your layer of cookie dough from scratch or you can buy pre-made from the store. If you buy pre-made you’ll only need a few ingredients to make this great recipe.

Boxed Brownies – Choose a brownie mix that has chocolate chips for the brownie part of your brookies. This adds so much to the flavor of the brookies. You will also need the ingredients on the back of the mix. This is usually oil, eggs, and water.

All-Purpose Flour – Use white flour when making the cookies. I like to use King Arthur for my recipes.

Baking Soda – This helps the cookie dough rise.

Dark Brown Sugar and White Sugar – These sugars sweeten the cookie dough.

Unsalted Butter – Be sure to use softened butter at room temperature and not cold butter or melted butter. This is essential for it to cream together correctly with the sugar.

Egg – The egg binds everything together in the cookie dough. Use organic eggs when possible.

Vanilla Extract – This is my favorite vanilla extract to use in recipes. It adds so much flavor!

Chocolate Chips – You need chocolate chips for the cookie dough. Use semi-sweet chocolate chips.

How To Make Easy Brookies

Here are the basic 3 steps to making this yummy brookie recipe! The full recipe is in the recipe card below.

Brownie Mix: Follow the directions on the back of your brownie mix and pour the batter into a prepared pan.

Cookie Dough: Make the cookie dough and place scoops on top of brownie batter. You can make homemade chocolate chip cookies or use store-bought dough.

Bake: These will bake for about 40 minutes until the cookies are golden brown and the brownies have puffed up and are baked.

Recipe Tips & Variations

Pan size matters: Use a 9×9 pan for the perfect thickness. You can also use an 8×8 or 9×13 pan. Remember, if you use a larger pan, the brookies will be thinner and bake up quicker. Using a smaller pan will make it thicker and take longer to bake.

Line the pan: Parchment paper makes removing and slicing so much easier.

Cool before cutting: This keeps your brookies from falling apart.

Flavor boost: Try a dark chocolate brownie mix for a richer taste.

Can I make brookies without a boxed brownie mix?

Absolutely! If you prefer from-scratch baking, you can swap the boxed mix for your favorite homemade brownie recipe. I have a fudgy homemade brownie recipe that works perfectly. Just make sure the batter is thick and rich so it holds up under the cookie layer.

Do I need to chill the cookie dough before baking?

Nope! For this recipe, you can go straight from mixing the dough to layering it over the brownie batter. Chilling isn’t necessary since the brookies bake low and slow, which keeps the cookie layer soft and chewy while the brownie layer cooks through.

Easy Brookies Recipe

Ingredients 

Brownies

  • 1 Package boxed brownies, Use one with chocolate chips in the batter.
  • Follow the ingredients on the back of the brownie box., This is normally eggs, oil and water

Chocolate Chips Cookies

  • 1 1/8 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temp.
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1 cup semi-sweet chocolate chips

Instructions 

  • Follow the directions and ingredients on the back of the brownie box.
  • Prepare a 9×9 metal baking pan with butter and parchment paper.
  • Pour the brownie batter into the prepared baking pan.
  • Combine the flour, salt, and baking soda in a medium mixing bowl.
  • In the bowl of an electric mixer, beat butter and both sugars.
  • Add in the egg and the vanilla extract.
  • Turn the mixer to low and add the flour mixture.
  • Scrape the bottom of the bowl and mix until the ingredients are combined.
  • You'll only need about 1/2 to 3/4 of the cookie dough so you can store the rest, freeze it or make cookies with it.
  • Scoop the cookie dough and place it directly onto the brownie mix. Do at least 12 giant scoops of dough to cover the top.
  • Bake the brookie for 40 to 45 minutes in a preheated 350-degree oven.
  • The brownies will be puffy on the edges and in the middle and the cookies will be golden brown.
  • Remove and let them cool for 10 minutes before serving.

  • You can use a boxed brownie mix with chocolate chips or pre-made chocolate chip cookie dough to save time.
  • Make ahead: Assemble the brookies, cover, and store in the fridge until ready to bake. For the best flavor, bake about one hour before serving.
  • Extra cookie dough? Save it for later or bake a few cookies on the side.
  • Storage: Keep in the fridge for up to 3 days or freeze for up to 3 months.
How to Tell When Brookies Are Done
  • The brownie layer should be set and the cookie layer golden brown.
  • Insert a toothpick into the center—it should have a few moist crumbs, not come out clean. Clean means overbaked and dry.
  • Brookies are best when slightly underbaked for a fudgy, moist texture.
  • Look for brownies that have puffed up along the edges with a glossy top, and cookies that are deep golden brown.
