Cereal ice cream is super delicious! These infusion ice creams were made popular by restaurants such as Momofoku, The Cosmic Creamery, and the Milk and Cream Cereal Bar. It’s a colorful and fun dessert and this one made with Lucky Charms is perfect for St Patrick’s Day, plus its egg-free!
Just in time for Saint Patrick’s Day, we’re so excited to share this Lucky Charms ice cream recipe! I will fully admit when I was a kid I would make an all-marshmallow cereal by picking out the colorful, crunchy marshmallows from the Lucky Charms box and boy, was it good!
So when I got a text message showing me a Lucky Charms-flavored ice cream, there was no doubt I was creating my own version!
I put my 4-year-old to work, sorting out the marshmallows from the frosted oats. I was a proud mama when I noticed he refrained from eating them all and actually followed my instructions! Honestly thought they would all end up in his belly!
How To Make Cereal Ice Cream With Lucky Charms
- In a bowl, stir together 1โ4 cup milk and the cornstarch; set aside
- In a medium saucepan, whisk together remaining milk, heavy cream, sugar, syrup, and salt and bring to a boil over medium-high heat.
- Cook for 5 minutes, watch it carefully as it will boil over quickly!
- Stir in the cornstarch mix and then return to a boil and cook. Stir constantly until thickened, about 3 minutes.
- Place the softened cream cheese in a bowl and pour in 1โ4 cup hot milk mixture.
- Whisk until completely smooth. No lumps in the cream cheese.
- Add it back into the main mixture and stir all together. Add in the vanilla.
- Put the mixture, covered in the refrigerator. It must be completely cooled so leave it for a few hours or overnight.
- Pour mixture into an ice cream maker; process according to manufacturer’s instructions.
- When the ice cream is thickened, add in the marshmallows fluff and 4 cups of Lucky Charm marshmallows and churn a few times until incorporated. Do not over mix.
- Pour into a container to freeze.
Homemade Lucky Charm Ice Cream
I went to my trusted ice cream base (we’ve used it here and here), that was adapted from Jeni’s and altered it to make one “magically delicious” (sorry, I had to!) Lucky Charms ice cream that actually tastes like the cereal, but even better!!
The marshmallows do soften, but they keep their yummy flavor and make beautifully colorful swirls in the ice cream. It’s truly my absolute favorite ice cream recipe base! No eggs, which I love and very easy to make.

In honor of Saint Patrick’s Day, we decided to make mini ice cream cones for the little leprechauns that will be partaking in this fun dessert. How cute are those?! We picked them up at our grocery store!
