Our favorite classic, chewy snickerdoodle cookie recipe with sweet cream ice cream. These are the perfect summer treat, full of sugar, cinnamon and sweet cream flavor!

Snickerdoodles are not only a holiday cookie! They are perfect year-round and make the yummiest ice cream cookie sandwiches too.

These are also my pop’s favorite cookie and after trying so many recipes, we finally have the most perfect, classic snickerdoodle cookie recipe. They have a little crinkle top and come out chewy! They are beyond delicious!

How to Make a Snickerdoodle Ice Cream Sandwich

First, make a batch of our very favorite snickerdoodle cookies!

Second, choose an ice cream you love like vanilla, sweet cream, cinnamon or anything that sparks your interest!

Lastly, scoop a giant scoop of ice cream on the bottom cookie, place another cookie over the top and gently press them together!

Adding sprinkles to the cookies is a great way to decorate them! Sprinkles will stick to the sides of the ice cream. Just add the sprinkles to a bowl or a plate and roll them in the sprinkles.

WHY IS IT CALLED A SNICKERDOODLE?

There are a few different theories about where the Snickerdoodle’s name came from, but a lot of people think it’s a Dutch or German translation.

Snickerdoodle is a translation of the German word, “Schneckennudeln,” which means “snail dumpling.” Or, it may come from the Dutch word, “Snekrad,” which also describes the cookie as a snail shape.

So, whichever story you like better, just go with it!

Ingredients 

  • 1/2 Pint Ice Cream
  • Sprinkles
  • 20 snickerdoodle cookies

Instructions 

  • Bake a batch of our chewy snickerdoodle cookies.
  • Add one scoop of ice cream to the bottom of a cookie and then add another cookie on the top.
  • Gently press the cookies together to sandwich the ice cream between them.
  • Roll in sprinkles to add color!
